Frequently Asked Questions
- 1:1:1 = high activity, peaks in 4-6 hours. 1:2:2 = standard daily. 1:5:5 = slow rise, good for overnight. 1:10:10 = very slow, mostly for storage refresh.
- Water weight ÷ flour weight × 100. A 100% hydration starter has equal flour and water. Stiff starter (50% hydration) has half as much water as flour.
- Ratio controls how fast your starter peaks (when it's most active for baking). Higher flour/water ratios slow it down by spreading less starter through more food.
- Whole grain flours have more wild yeast and ferment faster. Mixing 25% whole grain with 75% AP gives consistent activity without overpowering bread flavor.
- No — discard is unfed starter. This calculator is for active feedings. For discard recipes, just use the discard amount the recipe calls for.
